Corn Muffins or *Bread
Preheat oven to 375 degrees
1 cup whole grain cornmeal
1 cup whole wheat flour or unbleached
3 teas. Baking powder (aluminum free)
½ teas. Himalayan pink salt
½ cup raw sugar
3 large eggs
1.5 cups goats milk, or vanilla almond milk
¼ cup sunflower, melted coconut, or extra virgin olive oil
Mix dry ingredients. Add wet ingredients and mix well. Fill a 12 cup greased muffin tin with mixture three quarters way in each hole.
*Optional: Fill a greased loaf pan with mixture. Bake at 350 degrees for 25 to 30 minutes until toothpick inserted comes out clean.
Bake at 375 degrees for approximately 20 minutes or until toothpick inserted comes out clean.
